Cholesterol is not soluble in the blood. In order to circulate, it needs to be transported by specific proteins, LDL cholesterol and HDL cholesterol.

LDL transports the majority of the cholesterol known as bad cholesterol, which can cause the formation of atheroma plaques on the artery walls. Any reduction in excessive LDL cholesterol will result in a significant reduction in cardiovascular risk.

HDL's have a cholesterol-eliminating role and by transporting it from the blood to the liver are considered as good cholesterol as they protect the arteries from atherosclerosis.

How do phytosterols lower cholesterol levels in the blood?

Phytosterols or vegetable sterols are compounds naturally present in vegetable oils. The first phytosterol was discovered in wheat germ and was later discovered in other vegetables such as corn, olive, canola and soya beans.

Phytosterols are structurally similar to cholesterol and they compete with the cholesterol we ingest for absorption through the small intestine. Up to a point, the more phytosterols present in the intestine, the less cholesterol absorption will occur. So when you consume phytosterols you inhibit the intestinal absorption of cholesterol by the body, which leads to a decrease in flow of dietary cholesterol towards the liver and a consequent reduction in the endogenous secretion of LDL cholesterol by the liver. Meanwhile, the phytosterols themselves are naturally flushed through the system without being absorbed into the body as well.
