Lecithin the main source of Choline

Lecithin is a complex mixture of natural chemical compounds called 'Phospholipids', which consist of fatty acids and a phosphate group linked to Choline and Inositol. Lecithin occurs naturally in all human, animal and vegetable cells.

In humans, where the highest concentrations are found in the brain, liver, kidneys and bone marrow, Lecithin circulates in the blood, keeping other fatty substances - including cholesterol - in suspension.

Lecithin is rich in Phosphatidyl Choline, a nutrient which plays an important role in the breakdown of fat in the liver and the emulsification of fat in food.

Why supplement with Lecithin

Lecithin can be found in a wide variety of foods and acts as a natural emulsifier. Unfortunately, many of the richest sources of Lecithin are also high in cholesterol and fat.

For example, egg yolks and meats are good sources of Lecithin. Grains, fruits and vegetables are much poorer sources. Because many people have decreased consumption of fatty foods their intake of Lecithin may be inadequate.

And as refining destroys the valuable Lecithin content of food, diets which are rich in refined foods may not contain sufficient Lecithin.
